When I was a kid, we drove to Florida every summer to visit my grandparents. To give you a visual, there were five of us, in a station wagon, with me sitting on that bucket seat facing out the back!). Those vacations were pretty fun; fishing, swimming, relaxing for a week or two. And when I think of those trips, I ALWAYS think of my grandmother's frozen key lime pie. She was a product of the 50's so she relied heavily on convenience foods, including frozen whipped topping. Chances are, you'll never see a professional chef work with Cool Whip! But, truth be told, her pies were always a highlight. So simple to prepare, and perfect at the end of a hot day. Here's the recipe for you to try this weekend. Just don't tell folks about the Cool Whip.
Fresh Lime Pie with Vanilla Cookie Crust
For the best result, use fresh lime juice for this awesome, frozen pie. For more of a lime flavor and flecks of lime in the filling, add 2 tablespoons finely grated lime zest. You can also make this pie with lemon juice and lemon zest or orange juice and orange zest. The orange version tastes like a Creamsicle.
8-ounce tub frozen non-dairy whipped topping, thawed according to package directions
8-ounce can sweetened condensed milk
1/4 cup fresh lime juice
9-inch prepared vanilla cookie crust (or a homemade graham cracker crust)
Whisk together the non-dairy whipped topping, condensed milk and lime juice until well blended. Spoon the mixture into the prepared crust and freeze until firm.
Serves 6-8
