this salad in just minutes.
The dressing is a fresh and
light blend of fresh lime, olive oil and honey mustard. I love the combination of tart and sweet, with a hint of olive oil. Now, just toss the dressing with fresh berries,
cucumber and mint, you have a dish that tantalizes your palate on every
level: sweet, tart, tangy, and perfectly crunchy.
Need a main course salad? Add strips of grilled chicken, steak or cooked, peeled shrimp.
Easy Mixed Berry and Cucumber Salad with
Fresh Mint
For the Lime Dressing:
1 teaspoon finely grated lime zest (zest the lime before juicing it)
3 tablespoons fresh lime juice
3 tablespoons olive oil
1 teaspoon honey mustard
For the salad:
3 cups hulled and quartered fresh strawberries
1 cup fresh blackberries
1 medium cucumber, quartered lengthwise, seeded and chopped into
1-inch pieces
1-2 tablespoons chopped fresh mint
Salt and ground black pepper
4 large butter or Bibb lettuce leaves
In a large bowl, whisk
together lime zest, lime juice, oil, and honey mustard. Add
strawberries, blackberries, cucumber, and mint and toss to coat. Season to taste with salt and pepper.
Arrange lettuce leaves on
individual plates. Spoon the salad mixture onto the lettuce leaves and serve.
