How do they get the chips so crunchy?


Have you ever wondered how Cape Cod gets their potato chips so crisp and full of flavor? I mean, let's face it, they're crisper (crispier?) than other brands and all varieties of their chips are excellent; brimming with authentic potato flavor and a satisfying crunch. Last week I took their factory tour and it was plain and simple, AND it shed light on why their chips are so dang good. Nothing fancy. No bells and whistles. We walked down one, short hallway and saw the whole production - from sliced, to fried, to bagged. The way food should be prepared. Few ingredients (potatoes, canola oil and salt), cooked in kettles with spinning paddles that keep the feshly cut slices from sticking together. When we were there, they were producing their reduced-fat variety, which means the potatoes took a few extra turns to remove more oil. And get this: Fresh from the fryer tastes exactly like the bag from
the grocery store shelf. I find that a huge accomplishment. Especially because they use no preservatives. I like them even more now.
