Hoisin-Glazed Pork
Chops with Rosemary and Cracked Black Pepper
Cooking spray
1/2 cup hoisin sauce
2 sprigs fresh rosemary
1 tablespoon fresh lemon juice
1/2 teaspoon cracked black peppercorns or coarsely ground black pepper

Salt and ground black pepper
Coat
a stove-top grill pan, outdoor grill or griddle with cooking spray and preheat to
medium.
Combine
the hoisin sauce, rosemary sprigs, lemon juice, and cracked black
pepper in a small saucepan and set the pan over medium heat. Bring to a
simmer. Simmer while the pork cooks (next step).
Season both sides of the pork
chops with salt and ground pepper. Add the chops to the hot pan and cook 3
minutes per side.
Brush the hoisin glaze over both sides of the pork chops and cook an additional 2-3 minutes per side, until almost cooked through (still slightly pink in the very center is ideal). Transfer the pork to a serving platter and drizzle any remaining glaze over top. Garnish with extra rosemary if desired.
