Happy Memorial Day Weekend! Spice things up this weekend and do something different on the grill. PORK! The same-old, same-old roasted loin can get old (at least in my house). But, most folks love kebabs and there are about a gazillion ways to make them. Here's a simple recipe you can enjoy this weekend (or any busy weeknight).
Soy-Glazed Pork Kebabs with Bell Pepper and Onion
Cooking spray
1 pork tenderloin or loin (about 1-1 1/4 pounds), cut into 2-inch pieces
1 yellow bell pepper, seeded and cut into 2-inch squares
1 green bell pepper, seeded and cut into 2-inch squares
1 red onion, cut into 2-inch pieces
16 cherry tomatoes
2 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon seasoned rice wine vinegar
1/4 teaspoon Chinese mustard powder (regular or hot)
Salt and freshly ground black pepper
Coat an outdoor grill or stove-top grill pan with cooking spray and preheat to medium-high.
Alternate pieces of pork, bell pepper, onion, and cherry tomatoes on metal or wooden skewers (soak wooden skewers in water before using to prevent scorching them - about 10 minutes).
In a small bowl, whisk together the soy sauce, sesame oil, vinegar, and mustard powder. Brush the mixture all over the pork and vegetables. Season with salt and pepper.
Arrange the kebabs on the hot grill and cook 5-7 minutes, until the pork is almost cooked through (a little pink in the center is ideal but you can cook it all the way through if you prefer), turning frequently.
