Hooray, Hooray - saw fresh cob corn today! And, it's downright awesome!! Here's a fun little recipe for grilled corn. I added fresh chives and tart lime to creamy butter and slathered it on fresh grilled corn to bring out the corn's wonderful sweetness.I pulled the recipe from Robin Takes 5 if you want to check out about 60 more side dishes with 5 ingredients or less!
Grilled Corn
with Lime-Chive Butter
Cooking
spray
4
ears cob corn, shucked
2
tablespoons unsalted butter
1
lime, juice and zest
2
teaspoons chopped fresh chives
Coat
a stove-top grill pan or griddle with cooking spray and preheat to medium
high.
Place
the corn on the hot pan and grill for 5 minutes, until the corn is golden brown
and tender, turning frequently.
Meanwhile,
combine the butter, 1 tablespoon of the lime juice, 1/2 teaspoon of finely
grated lime zest and chives in a small saucepan. Set the pan over medium heat and cook until
the butter is melted, stirring frequently.
Season the corn with salt and freshly ground black pepper and serve with
the butter mixture drizzled over top.
