Watermelons, Already?

 

Nice Melons!
Oh my - the watermelons have arrived ! I couldn't believe my eyes when I stepped into my favorite farmer's market, Sprouts, today. It seems REALLY early in the season, but they looked amazing! I snatched one up for just 25 cents/pound. Curiosity got me ("Why so early?"), so I did some research. Seems favorable weather conditions, such as minimal rain and 80+ degree days in January and February brought the crops early. And, they're good-looking crops! To celebrate, I dug up one of my favorite recipes for watermelon from my cookbook, "Robin Takes 5 for Busy Families". Enjoy!



Frozen Watermelon & Yogurt Triangles
The watermelon triangles can be prepared up to 1 week in advance and frozen until ready to serve.
This also works with slices of cantaloupe and honeydew melon.

Prep time: 5 minutes
Freezing time: 1 hour

8 ounces vanilla lowfat yogurt
2 tablespoons confectioners’ sugar
1/2 teaspoon vanilla extract
8 slices watermelon (cut into 1-inch thick triangles)

In a shallow dish, whisk together the yogurt, confectioners’ sugar and vanilla extract. Dip the watermelon triangles into the yogurt mixture, coating about 2/3 of the flesh. Transfer the watermelon to a large baking sheet and freeze until the yogurt is firm, about 1 hour.

Serves 4
