Might as well cook with beer too...

 

Since the beer was so refreshing last night, I thought I'd share a simple chicken recipe with beer and caramelized onions!



Seared Chicken and Onions with Maple-Brown Ale Glaze
Brown ale adds a wonderful depth to this sweet and tangy chicken dish.  If you don’t have brown ale, you can also use an amber beer.

Serves 4

Prep time: 10 minutes
Cooking time: 15 minutes

1 tablespoon garlic-flavored olive oil
4 boneless skinless chicken breast halves (about 5 ounces each)
1 cup thinly sliced yellow onion
1 cup brown ale
2 tablespoons maple syrup

Heat the oil in a large skillet over medium-high heat.  Add the onion and cook for 3 minutes, until soft.  Remove the onion from the pan and set aside.  Add the chicken to the same pan over medium-high heat and cook 2 to 3 minutes per side, until golden brown.  Return the onion to the pan with the ale and maple syrup.  Bring to a simmer.  Simmer for 5 minutes, until the chicken is cooked through.
