Nachos!

Yes, I'm a nutritionist, AND we went skiing all day! I make healthy nachos at home! Go power food!

And, since I make healthier chicken nachos at home.. here you go. Five ingredients too!



Chicken Nacho Dinner
This dish is reminiscent of a meal I used to enjoy at the North Star restaurant in Philadelphia.  Every Friday night!  Who says you can’t have nachos for dinner?  Chicken, cheese, beans, whole grain corn tortillas… sounds healthy to me!

Serves 6

Prep time: 10 minutes
Cooking time: 10 minutes

6 cups baked corn tortilla chips
4 cups shredded or cubed cooked chicken (such as rotisserie chicken or leftover roasted or grilled chicken)
15-ounce can black beans, rinsed and drained
1 cup prepared salsa
2 cups shredded cheddar cheese, mild or sharp

Preheat the oven to 350ºF. 
Arrange the chips in the bottom of a shallow roasting pan.  Top the chips with the chicken, beans, salsa and cheese.  Bake for 10 minutes, until the cheese melts.
